           MIXED BERRY

           HAND PIES



              Berries are delicious, and they give
           a  unique  twist to  any  dessert but,  have
           you  ever  tried  them  in  a  vegan recipe?
           These Mixed Berry Pies are gluten-free,
           egg-free, and irresistible.  It makes 18-20
           small hand pies or 9-10 large ones.  Kids
           at home can have fun helping you in the
           kitchen. They will love it.

              Enjoy cooking with your loved ones,
           creating memories around the table that
           last a lifetime!

                                                 For the Crust:
                                                 *  1/2 cup coconut flour
                                                 *  2 cups gluten-free all-purpose flour
                                                 *  3 tbsp sugar
                 INGREDIENTS
                                                 *  1 tsp xanthan gum
                                                 *  2 tsp salt

           For the Filling:                      *  1 cup cold butter (2 sticks) cut into
                                                   small pieces or 1 cup palm shortening.
           *  2 cup mixed berries, finely chopped  (I prefer using butter for flakiness).
           *  1/4 cup sugar                      *  1/2-3/4 cup cold water. (You don’t want
           *  2 tbsp lemon juice                   the dough too wet, so start with less
           *  1 tbsp vanilla bean                  water and add more if needed).

                                                 *  Optional:  ¼ cup milk of your choice
                                                   (for brushing the crust)
