            But don’t just resign yourself to a diet
            of turkey sandwiches until the New
            Year. Unleash your Spanish side
            and turn your bird into this delish
            omeletteinstead.Olé!
        Leftovers Omelette
            Serves5.Preptime:30mins.
            Cooktime:20mins
            ●3bonelesschickenthighs/leftover
            turkey ● Sea salt ● 2tsp paprika ● 1tsp                                                                   #73
            lemon zest  ● Pepper to taste ● 2tbsp
            rapeseed oil ● 1 medium potato, skin on/
            leftover roasties ● Red onion, chopped
            ● 1 red pepper, chopped  ● 1 fresh chilli,
            chopped ● 50g sundried tomatoes
            ● ½tsp cayenne pepper ● 1 grated garlic
            clove ● ½tsp fresh grated ginger ● 50g
            chorizo, chopped thinly ● Small stock    TIP:
            cube ● 5 large eggs ● 100g mild Cheddar  SLOWLY

           andaddtothechicken.Bakeat180°Cfanfor

                                                                                in the oven at 180 C fan for approximately
                                            meat and add it along with the potatoes to the veg.
                                                                                20 mins until baked. Serve immediately.
