                       In the cast of food ingredients that make up processed
                       foods, sugar is a character by many names: sixty-one in total,
                       according to the University of California, San Francisco’s
                       estimate. Often small amounts of several different types of
                       sugar—from maltose to molasses and agave nectar to corn
                       syrup—are listed separately in an ingredients list on a food
                       package to avoid one large total amount landing at the
                       beginning of the list.
