I have over 18 years of experience working in various 5 star Hotels and fine dining restaurants,
with some of the top Chefs on the island. I also had the opportunity to work in London in Michelin
star restaurants like Gordon Ramsay’s At Claridge’s, Le Gavroche with Michel roux Junior and Tom
Aitkens restaurant in Chelsea.
For the past 5 year, I have been working at Hilton Malta, where my career progression started off at
Junior Sous Chef level. 4 promotions later, I now hold a position as Head Chef.
I love the creativity involved in combining different flavours, colours, textures and tastes. I’d like to
think of every plate we serve as an individual work of art.

The Institute of Tourism Studies (ITS) is more than just an Institution. It actually denotes culture
of excellence, empowerment and enrichment. ITS not only provides their students with intensive
knowledge but also with valuable training, hands on experience, professional skills and the right
confidence to excel in this challenging and ever demanding Hospitality Industry.
It has been an amazing journey learning from hospitality professionals who have moulded me into a
passionate manager that this industry needs. Having had the opportunity to work overseas at the Hilton
in Bath Somerset; I can now say that it was an experience I will never forget; as it gave me a broader
understanding of how awarding this industry is as well as knowledge that all destinations have their own
challenges. One thing I have learnt at The Xara Palace Relais & Chateaux was the drive to create a team
that is driven by its passion in the industry; which is that special sense of “Family Spirit” amongst team
members. As an ex ITS student, I can proudly say that I have cherished every moment.
