STABILIZER FONDS Cream charlotte. Stabilizer fonds for creams based on whipped cream. They have
vegetable and dairy origin. They are delivered by a wide palette of lavors from fermented milk to fruit
and berry. They provide illed and rich taste: sour milk contains yoghurt or cheese powders, fruit and
Cream berry ones contain natural freeze-dried fruits and berries. They have high stabilizing ability. The inished
product is easily cut after 30 minutes of cooling in the refrigerating chamber. They are used not only to
stabilize the structure of cream based on whipped cream but also to make mousses and cake souf lés.
Charlotte Cost effective to use. Easy cooking process. The products using stabilizer fonds are resistant to freezing
and subsequent defrosting; fully preserve the appearance of inished product.
Ingredients: Sugar, glucose, dextrose, corn starch, sodium alginate (E401), food coloring, natural lavoring,
citric acid, freeze-dried fruits and berries; yoghurt or cheese powders.
Method of use
Сharlotte mixture......200g Dissolve the mixture in boiled water cooled to 25°C and mix with
Water.............................250g whipped cream until smooth.
