ZUCCHINI BREAD
From the kitcehn of Roxanne Limon (Morgan Limon's mom)
Ingredients:
3c flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tbsp cinnamon
3 lg eggs
1 c vegetable oil
2 ¼ c sugar
3 tsp vanilla extract
2c grated zucchini
1c chopped walnuts
Directions:
Preheat oven to 325 degrees. Grease and flour two 8x4 pans. Sift flour, salt, baking powder,
baking soda and cinnamon together in a large bowl. Beat eggs, oil, sugar, and vanilla together in
a separate lg bowl until combined; add flour mixture and beat well. Stir in zucchini and walnuts
until combined. Pour batter into prepared pans. Bake in preheated oven until toothpick inserted
comes out clean (about 40-60 mins). Cool in pans on wire rack for 20 in. Run knife around
edges to loosen. Insert carefully onto wire rack and let cool completely.
