BAKED LEMON GARLIC SALMON



      From the Kitchen of Chelsea Nguyen





      Ingredients:
      2 lb. salmon filet
      Kosher salt

      Extra virgin olive oil
      ½ lemon, sliced into rounds

      Parsley, for garnish
      SAUCE

      Zest of 1 large lemon
      Juice of 2 lemons

      3 Tbsp. olive oil
      5 garlic cloves
      2 tsp. oregano, dried

      1 tsp. sweet paprika
      ½ tsp. black pepper



      Directions:

      Heat oven to 375 degrees Fahrenheit
      Make the lemon-garlic sauce by whisking all ingredients together

      Prepare a sheet pan lined with a large piece of foil to fold over salmon
      Brush top of the foil with extra virgin olive oil

      Pat salmon dry and season well on both sides with kosher salt
      Place on the foiled sheet pan

      Top evenly with lemon garlic sauce
      Fold foil over the salmon

      Bake for 15-20 minutes until salmon is almost completely cooked through at the thickest

      part
      Carefully remove from oven and open foil to uncover the top of the salmon
      Place under the broiler for about 3 minutes or so




      Notes: Salmon is cooked to an internal temperature of 145 degrees
