Comfort in
a bowl
These one-pot veggie
suppers with pasta
or grains are quick,
easy and healthy
– ideal for those
chilly evenings
Veggie spag bol
Serves 4
Prep 10 mins, cook 15 mins
350g spaghetti
1 onion, thinly sliced
350g passata
1 carrot, peeled and thinly sliced
2 sprigs of thyme
2 bay leaves
150g tempeh, chopped
1 garlic clove, chopped
1 litre water
2 pinches of salt
2 pinches of pepper
Grated vegetarian parmesan, to serve
Put all the ingredients except the parmesan
in a casserole dish and cook for approximately
15 minutes over a medium heat, stirring regularly.
Serve with the grated vegetarian parmesan.
