Cajun Wedges

           Serves 4

           These spicy wedges are the perfect
           accompaniment to a burger. Maris piper
           potatoes keep a flufy centre and crisp
           up beautifully on the outside.

           •  1kg (35oz) Maris Piper potatoes, cut
             into wedges
           •  2 tbsp oil
           •  2 tbsp Cajun spice

           1    Firstly pre-heat the oven to
           200°C/400°F/Gas 6. In a large bowl, toss
           the potatoes together with the oil and
           Cajun spice. Spread over a baking tray
           and cook in the oven for 50-60 minutes,
           removing and turning occasionally until
           evenly cooked.

                    Top Tip:

                The wedges can also be cooked
               in an air fryer and will be ready in
               20-25 minutes. Try adding quarter
               a teaspoon of chilli powder if you
                    prefer spicier foods.
