AMBER'S CARROT APPLE CAKE WITH CREAM

        CHEESE FROSTING



        From the Kitchen of Amber Snavely



        Ingredients:
        1 ½ cup of sugar
        1 cup vegetable oil

        3 eggs
        1 tsp vanilla

        2 C shredded carrots
        1 C coarsely shredded apples
        ¾ cup all-purpose flour
        2 tsp cinnamon

        1 tsp baking powder
        1 tsp baking soda

        1 tsp salt


        Frosting:
        1 package of cream cheese, room temp

        1/3 cup softened butter or margarine
        1 tsp vanilla

        2 C powdered sugar



































        Directions:
        Mix together sugar, oil, eggs and vanilla. Add apples and carrots. Add flour, cinnamon, baking

        powder, baking soda and salt. Batter will appear slightly runny. Pour into greased and floured 9 x
        13 pan. Bake 30-40 minutes at 350 degrees. Cool. Combine ingredients for frosting and spread
        over cooled cake.
