                                                                                                                     POMEGRANATE








                                                                                                                     Add 10 oz. fresh baby spinach
                                                                                                                                                 ,

                                                                                                                     ½  cup pomegranate seeds,
                                                                                                                     and ¼  cup toasted slivered

                                                                                                                     almonds to a bowl. Toss with
                                                                                                                     store-bought strawberry or
                                                                                                                     raspberry vinaigrette. Top with
                                                                                                                     4 oz. crumbled feta or goat
                                                                                                                     cheese. Sprinkle with cracked

                                                                                                                     black pepper. Serves 4.







                           HONEY-ROASTED





                  Preheat oven to 375°F. Lightly
                 grease a 9x13-inch baking pan
                                              .
                      Spread 1 lb. quartered new
                  red potatoes in a single layer;

                top with ¼  cup diced onion. Stir
                  together 2 Tbsp. melted butter,
                1 Tbsp. honey, 1 tsp. dry mustard,
                   and a pinch of salt and black
                pepper in a bowl. Drizzle mixture
              over potatoes; toss to coat. Roast,
                   stirring halfway through, until
               tender, about 35 minutes. Garnish
                    with fresh  parsley. Serves 6.




                                                                                                                     ROASTED








                                                                                                                     Heat oven to 400°F. Toss 1 lb.
                                                                                                                     trimmed and halved Brussels
                                                                                                                     sprouts with 2 Tbsp. olive oil,

                                                                                                                     1 tsp. garlic powder, 1 tsp.  black
                                                                                                                     pepper, and ½ tsp. salt. Put in a
                                                                                                                     9x13-inch pan and roast 20 minutes,

                                                                                                                     then continue roasting until melted,

                                                                                                                     about 1 minute more. Sprinkle
