                               Whole Roasted Chicken and Veggies






































        One of the most satisfying things to make for dinner is a whole roasted organic chicken, flanked with organic,
        herb-coated veggies.  It looks super impressive without being difficult at all to make. And best of all it only
        takes very little actual prep time.

        This is the recipe that I use for my Sunday roasted chicken. Serve with a fresh loaf of almond bread. Divine!

        Here’s what you need:
              3 bulbs garlic                                          1 teaspoon minced garlic
              1/4 cup olive oil                                       zest and juice from one lemon
              salt and pepper                                         4 large organic carrots, cut into 1 inch pieces
              4 Tablespoons coconut oil, gently melted                3 organic zucchini, cut into 1 inch half-
              1 Tablespoon each minced, fresh rosemary,                 moons
               oregano, tarragon                                       1 cup pearl onions, ends trimmed
